Carribean Chicken


4 tablespoons olive oil

4 boneless skinless chicken breast cut into bite sized pieces

1 1/4 cup chunky salsa

1/2 cup marmalade

1 1/2 tablespoon brown sugar

3 tablespoons fresh lime juice

1/4 teaspoon cinnamon

1/4 teaspoon cloves

Cooked Rice

1) While the rice is cooking,heat oil in a large skillet at medium heat. Add chicken and stir about 7 minutes.If any juice remains in pan after cooking drain.

2) In a medium bowl combine salsa, marmalade, brown sugar, lime juice, cinnamon and cloves; mix well.

3)Add to chicken and mix well. Bring to a boil. Reduce heat to low and cover and simmer 5-20 minutes stirring occasionally. Serve over hot rice.

Grocery List

Slow Cooker Chow Mein-1 pound ground beef,1 onion,1 bunch celery,2 cans(14 ounces each) chinese vegetables,2 envelopes brown gravy mix,soy sauce, rice


Mexican Potato Casserole-4 potatoes, butter, 1 envelope taco seasoning, 1 pound ground beef, 1 onion, salsa,1 green pepper, shredded montery jack cheese


Veggie Bolognese-1 bell pepper, 2 carrots,2 small zucchini, 1 onion, 2 garlic cloves,olive oil,1 dried bay leaf, dried thyme,salt,small can tomato paste,sugar,1(14.5 ounce) can unsalted diced tomatoes,water,Parmesan cheese, Pasta of your choice

Slow Cooker Chicken Parmesan


2-4 boneless skinless chicken breasts

1/2 cup plain bread crumbs( I used whole wheat)

1/c up grated Parmesan Chicken

1 teaspoon Italian seasoning

1/4 teaspoon ground black pepper

1/4 teaspoon salt

1 tablespoon olive oil

1 egg beaten

4-6 slices mozzarella cheese

1 jar (28 ounces) marinara sauce

Whatever spaghetti you want to serve


1) Drizzle 1 tablespoon oil over bottom of crock-pot. In medium bowl beat egg. in another medium bowl mix bread crumbs, spices and grated parmesan all together.

2) Dip chicken in beaten egg and toss into bread crumb mixture. Coat completely and place on bottom of crock=pot.

3)Place a layer of mozzarella slices on top and cover cheese layered chicken with jar of sauce. Cook on low 6-7 hours or high 3-4. Serve with pasta.

French Dip Sandwiches


1 pot roast 2 to 4 pounds

2 peppers sliced

1 medium onion sliced

Mozzarella cheese slices

1 McCormick Au JusĀ  Saus Packet( if you cannot find that you can substitute with McCormicks beef gravy packet)

Sub Rolls

1) In crock-pot dissolve seasoning packet in 3 cups of cold water then add the roast. Cook on low for 6-8 hours or high 4-5 hours.

2) One hour before you plan to eat,slice beef and peppers and onions and add back to crock pot.

3) When finished remove meat and veggies with a slotted spoon. Place mozzarella slices on sub rolls and put under low broil till cheese is melted and roll lightly toasted.

4) Fill rolls with meat and veggies.Then put sauce left in crock-pot into a bowl for dipping sandwiches into.

French Dip Sandwiches-1 pot roast(2-4 pounds),1 green pepper,1 red pepper,1 onion,Sliced Mozzarella,1 McCormick Au Jus Sauce Packet,Rolls

Potluck Pockets


1 pound ground beef

1/2 cup chopped onion

1/2 cup chopped green pepper

2 tablespoons Worcestershire sauce

2 tablespoons soy sauce

2 teaspoons garlic powder

1 teaspoon ground cumin

1/2 teaspoon italian seasoning

1/2 teaspoon onion powder

3 pita breads halved

1 large tomato diced

2 cups shredded lettuce


1) In a large skillet cook beef, onion and green pepper over medium heat till no longer pink, drain.

2)Add all seasonings and soy and Worcestershire sauce and mix wel.Cook a few more minutes. Spoon meat mixture into pita halves and top with lettuce and tomato.

Cheesy Breadsticks


1 Pillsbury regular crust dough

6 mozzarella string cheese

Marinara sauce


1) Preheat oven to 450.Roll dough out to a rectangle and cut into 6 rectangular pieces with a pizza cutter.

2) Take 1 cheese stick and place in middle of dough. Fold ends over cheese then sides and pinch as you go.Roll into a cylinder shape.

3) Place sticks on greased foil lined baking sheet and bake 14-15 minutes turning halfway through. Serve with marinara sauce.
