Bacon Cheeseburger Buns

Ingredients

2 tubes crescent rolls

1 pound ground beef cooked and drained

8-10 slices bacon cooked and drained

1/2 pound velveeta cheese( about 1/4 of the package)

salt and pepper to taste

2-4 tablespoons melted butter

Barbecue Sauce or ketchup for dipping

 

1) Preheat oven to 375. Spray cookie sheet with nonstick cooking spray. Cook and drain ground beef,set aside.

2) Cook and drain bacon and set aside. Cube cheese. Return ground beef to pan. Add bacon cheese and salt and pepper. STir together till cheese is melted.

3) Unroll crescent rolls and press 2 triangles together to form a square. Spoon ground beef mixture into center and wrap corners into middle.

4) Brush with melted butter. Place on cookie sheet and bake 12-15 minutes. Serve with ketchup r barbecue sauce

Oven Baked BBQ Chicken and Homemade Tator Tots

Oven Baked BBQ Chicken Ingredients

1 pound chicken breasts

1/4 cup barbecue sauce

1/4 cup italian dressing

Garlic powder

Lemon pepper seasoning

Salt and Pepper

 

1) Place chicken in a bowl. In another bowl combine all other ingredients and stir till combined.

2)Pour mixture all over chicken and allow to marinate for as long as you want. Preheat oven to 300 degrees. Take a baking dish and line with aluminum foil so that you have enough foil to fold the chicken into a big packet.

3)Place chicken and some of marinade on top of foil and fold foil over to make a packet. Seal on all sides and bake at 300 degrees for 2 hours.

 

Homemade Tator Tots ingredients

8 russet potatoes peeled and diced

1/4 cup milk

1 cup flour

3 eggs, beaten

2 cups crushed potato chips( I used pop chips to make it healthier)

 

1) Preheat oven to 400 degrees. Boil potatoes in pot till barely fork tender about 20 minutes. Drain and return to pot.

2) Gradually add milk and mash potatoes till mashed but still lumpy. Separate the eggs, flour and chips in 3 bowls and set aside.

3) Form potato mixture into 1 inch balls. Roll each ball first into flour then egg finishing with the potato chips. Once coated you can keep balls circular shaped or form them into tator tot shapes. Place on baking sheet and bake for 12-15 minutes.

Taco Casserole

 

Ingredients

10 ounces taco sauce

12 ounce can buttermilk biscuits

4-6 ounces shredded cheddar cheese

4-6 ounces shredded mozzarella cheese

1 can sliced olives, drained

1 pound ground beef

1 teaspoon chili powder

1 teaspoon cumin

1 bell pepper chopped

8 ounces mushrooms, sliced

 

1) Preheat oven to 400 degrees. Lightly grease a 13x 9 inch baking dish. Spread taco sauce evenly over bottom of dish.

2) Separate dough into 10 biscuits. Cut each biscuit into 4 pieces. Place biscuit pieces in taco sauce turning to coat.

3) Sprinkle biscuits with  mozzarella cheese and half of olives. Bake for 15-18 minutes. In a large skillet combine ground beef,peppers,mushrooms,cumin and chili powder.

4) Cook till ground beef is cooked through. Sprinkle ground beef mixture over baked biscuit mixture. Top with cheddar cheese and remaining olives. Cake another 5-7 minutes till cheese is melted.

Breakfast Casserole

Ingredients

1 tube ( 8 ounces) Pillsbury refrigerated crescent rolls

2 cups breakfast sausage cooked and crumbled

6 eggs

1/2 cup milk

Dash of salt and pepper

2 cups frozen hash browns, thawed

1 1/2 cups shredded cheddar cheese

1) Arrange crescent rolls on bottom of a 13×9 inch baking pan. Place cooked sausage on top. Beat eggs and milk together and set aside.

2) Layer hash browns over sausage and season with salt and pepper then our egg mixture over hash browns.

3) Top with cheese and bake at 375 degrees for 30 minutes.

Chili Cornbread Casserole

Ingredients

1 pound hamburger, browned (drained)

1/2 cup chopped onion

1 can diced tomatoes( do not drain)

2 (15 ounce) cans  Bush’s Chili Beans

1/2 teaspoon onion powder

3 teaspoons chili powder

1/2 teaspoon garlic salt

Salt and pepper

1 cup shredded cheddar cheese

1/2 cup additional cheddar cheese for batter ( optional)

2 packages Jiffy Corn Mix

 

1) Mix browned hamburger with onion and drain. Add tomatoes,chili beans and seasonings. Simmer for 15 minutes.

2) pour into a greased 9×13 inch pan and sprinkle with cheese on top. Mix cornbread mix according to box directions ( add cheese if using).

3) Pour corn muffin mix on top of chili and cheese and cover completely. Bake at 400 degrees for 20 minutes.

Mexican Potato Casserole

Ingredients

2 medium potatoes with peel on

4 tablespoons butter

1 envelope taco seasoning

1 pound lean ground beef

1 chopped small onion

2 cups salsa

1 cup chopped pepper

1 cup shredded cheese your choice

 

1) Cut potatoes into bite size pieces and place in a greased casserole dish. Melt butter and stir in taco seasonings. Pour over potatoes and stir to coat well.

2) Bake uncovered at 425 degrees for 40 minutes. Stir bake about 10 minutes longer. Brown and crumble beef in a frying pan;add onion and cook till soft then drain. Stir in salsa and chopped peppers.Pour over potatoes.  Top with grated cheese. Bake uncovered 10 minutes.

Slow Cooker Beef Chow Mein

Ingredients

1 pound ground beef

1 medium onion,chopped

1 bunch celery,sliced

2 cans (14 ounces each) chinese vegetables, drained

2 envelopes brown gravy mix

2 tablespoons soy sauce

Hot cooked rice

1) In a skillet cook beef and onion over medium heat till no longer pink, drain. Transfer to a slow cooker and stir in celery, chinese vegetables, gravy mixes,2 cups water for gravy and soy sauce.

2) Cover and cook on low for 4 hours, stirring occasionally.Serve over rice.
