Cajun Chicken Pasta


8 ounces rotini pasta

3 skinless boneless chicken breasts

2-3 teaspoons Cajun seasoning

2 tablespoons olive oil

1 bell pepper sliced

8 ounces sliced mushrooms

1 cup heavy cream

1/4 teaspoon fresh basil

1/4 teaspoon lemon pepper

salt to taste

2 cloves of garlic minced

1/8 teaspoon pepper

2-3 tablespoons cornstarch

1/3 cup grated parmesan cheese


1) Bring a large pot of water to a boil. Add salt and pasta then cook 10-12 minutes. Drain.

2) Place chicken and Cajun seasoning in a plastic bag and shake to coat. Heat olive oil in a large skillet and saute chicken about 5-7 minutes.

3) Add peppers and mushrooms. Saute and stir 3 minutes. Reduce heat. add cream ,basil, lemon pepper, salt and garlic powder and pepper. Heat through.

4) Add cornstarch till sauce reaches desired thickness. add cooked pasta and toss to coat. Sprinkle with Parmesan.



Sticky Chicken Finger Wraps


6 tablespoons Frank’s Hot Sauce

3/4 cup brown sugar

4 tablespoons water

8 frozen breaded chicken fingers

4 flour tortillas( burritos size)

2 cups shredded cheddar cheese

1 cup tomatoes, chopped

2 cups lettuce, chopped


1) Bake chicken fingers according to package directions. While chicken fingers are cooking prepare sauce.

2) In medium saucepan heat hot sauce, brown sugar and water over medium heat till sugar is dissolved and sauce is heated through. About 5-10 minutes.

3) Remove sauce from heat and set aside till chicken strips are ready. Place cooked chicken fingers in large plastic container. Pour sauce all over and shut with lid and shake till chicken is coated.

4) Place 2 sauce coated chicken fingers on tortilla.Add desired amount of cheese, lettuce and tomato and wrap.

Chicken Philly Sandwiches


2 boneless skinless chicken breasts

about 1/3 of a bottle of zesty italian dressing

4 hoagie buns or sub rolls

1 cup shredded mozzarella cheese

Green pepper sliced

1 large onion sliced


1) Split chicken breast in half and place in a container.pour dressing over chicken and place in fridge for at least an hour.

2) When chicken is ready to be cooked slice peppers and onion.Cook veggies and chicken till chicken is done.Slice chickenĀ  and place a few pieces of chicken and peppers and onions in each roll. Top with cheese and then wrap in aluminum foil and place on a cookie sheet and bake at 400 degrees for 5-10 minutes.

Carribean Chicken


4 tablespoons olive oil

4 boneless skinless chicken breast cut into bite sized pieces

1 1/4 cup chunky salsa

1/2 cup marmalade

1 1/2 tablespoon brown sugar

3 tablespoons fresh lime juice

1/4 teaspoon cinnamon

1/4 teaspoon cloves

Cooked Rice

1) While the rice is cooking,heat oil in a large skillet at medium heat. Add chicken and stir about 7 minutes.If any juice remains in pan after cooking drain.

2) In a medium bowl combine salsa, marmalade, brown sugar, lime juice, cinnamon and cloves; mix well.

3)Add to chicken and mix well. Bring to a boil. Reduce heat to low and cover and simmer 5-20 minutes stirring occasionally. Serve over hot rice.
