Oven Baked BBQ Chicken and Homemade Tator Tots

Oven Baked BBQ Chicken Ingredients

1 pound chicken breasts

1/4 cup barbecue sauce

1/4 cup italian dressing

Garlic powder

Lemon pepper seasoning

Salt and Pepper


1) Place chicken in a bowl. In another bowl combine all other ingredients and stir till combined.

2)Pour mixture all over chicken and allow to marinate for as long as you want. Preheat oven to 300 degrees. Take a baking dish and line with aluminum foil so that you have enough foil to fold the chicken into a big packet.

3)Place chicken and some of marinade on top of foil and fold foil over to make a packet. Seal on all sides and bake at 300 degrees for 2 hours.


Homemade Tator Tots ingredients

8 russet potatoes peeled and diced

1/4 cup milk

1 cup flour

3 eggs, beaten

2 cups crushed potato chips( I used pop chips to make it healthier)


1) Preheat oven to 400 degrees. Boil potatoes in pot till barely fork tender about 20 minutes. Drain and return to pot.

2) Gradually add milk and mash potatoes till mashed but still lumpy. Separate the eggs, flour and chips in 3 bowls and set aside.

3) Form potato mixture into 1 inch balls. Roll each ball first into flour then egg finishing with the potato chips. Once coated you can keep balls circular shaped or form them into tator tot shapes. Place on baking sheet and bake for 12-15 minutes.


Taco Casserole



10 ounces taco sauce

12 ounce can buttermilk biscuits

4-6 ounces shredded cheddar cheese

4-6 ounces shredded mozzarella cheese

1 can sliced olives, drained

1 pound ground beef

1 teaspoon chili powder

1 teaspoon cumin

1 bell pepper chopped

8 ounces mushrooms, sliced


1) Preheat oven to 400 degrees. Lightly grease a 13x 9 inch baking dish. Spread taco sauce evenly over bottom of dish.

2) Separate dough into 10 biscuits. Cut each biscuit into 4 pieces. Place biscuit pieces in taco sauce turning to coat.

3) Sprinkle biscuits with  mozzarella cheese and half of olives. Bake for 15-18 minutes. In a large skillet combine ground beef,peppers,mushrooms,cumin and chili powder.

4) Cook till ground beef is cooked through. Sprinkle ground beef mixture over baked biscuit mixture. Top with cheddar cheese and remaining olives. Cake another 5-7 minutes till cheese is melted.

Bacon Cheeseburger Buns-2 tubes crescent rolls,1 pound ground beef,8-10 slices bacon,1/2 pound velveeta cheese, salt and pepper, melted butter, shredded cheddar cheese,barbecue sauce for dipping

Cowboy Spaghetti-1 pound spaghetti,salt,olive oil,3 slices bacon,1 pound hamburger,1 onion,3-4 garlic cloves, pepper,hot sauce,Worcestershire sauce,beef stock,1 14 ounce can chopped fire roasted tomatoes,1 16 ounce can tomato sauce,8 ounces shredded cheddar cheese

Breakfast Casserole


1 tube ( 8 ounces) Pillsbury refrigerated crescent rolls

2 cups breakfast sausage cooked and crumbled

6 eggs

1/2 cup milk

Dash of salt and pepper

2 cups frozen hash browns, thawed

1 1/2 cups shredded cheddar cheese

1) Arrange crescent rolls on bottom of a 13×9 inch baking pan. Place cooked sausage on top. Beat eggs and milk together and set aside.

2) Layer hash browns over sausage and season with salt and pepper then our egg mixture over hash browns.

3) Top with cheese and bake at 375 degrees for 30 minutes.

Cajun Chicken Pasta


8 ounces rotini pasta

3 skinless boneless chicken breasts

2-3 teaspoons Cajun seasoning

2 tablespoons olive oil

1 bell pepper sliced

8 ounces sliced mushrooms

1 cup heavy cream

1/4 teaspoon fresh basil

1/4 teaspoon lemon pepper

salt to taste

2 cloves of garlic minced

1/8 teaspoon pepper

2-3 tablespoons cornstarch

1/3 cup grated parmesan cheese


1) Bring a large pot of water to a boil. Add salt and pasta then cook 10-12 minutes. Drain.

2) Place chicken and Cajun seasoning in a plastic bag and shake to coat. Heat olive oil in a large skillet and saute chicken about 5-7 minutes.

3) Add peppers and mushrooms. Saute and stir 3 minutes. Reduce heat. add cream ,basil, lemon pepper, salt and garlic powder and pepper. Heat through.

4) Add cornstarch till sauce reaches desired thickness. add cooked pasta and toss to coat. Sprinkle with Parmesan.


Pizza Bites


1 can (12 ounce) can Pillsbury refrigerated biscuits

1/2 cup pizza or pasta sauce

1/4 cup shredded Taco cheese or cheese of your choice

Any topping of your choice you would like to use


1) Heat oven to 400. Lightly grease cookie sheet. Seperate dough into 10 biscuits and flatten out to form mini pizza crust.

2) Place on greased cookie sheet. Top each mini crust with 1 tablespoon sauce. Top with cheese and desired toppings. Bake at 400 degrees for 7-9 minutes.

Chili Cornbread Casserole


1 pound hamburger, browned (drained)

1/2 cup chopped onion

1 can diced tomatoes( do not drain)

2 (15 ounce) cans¬† Bush’s Chili Beans

1/2 teaspoon onion powder

3 teaspoons chili powder

1/2 teaspoon garlic salt

Salt and pepper

1 cup shredded cheddar cheese

1/2 cup additional cheddar cheese for batter ( optional)

2 packages Jiffy Corn Mix


1) Mix browned hamburger with onion and drain. Add tomatoes,chili beans and seasonings. Simmer for 15 minutes.

2) pour into a greased 9×13 inch pan and sprinkle with cheese on top. Mix cornbread mix according to box directions ( add cheese if using).

3) Pour corn muffin mix on top of chili and cheese and cover completely. Bake at 400 degrees for 20 minutes.
