Meatloaf With Barbecue Glaze



3 tablespoons barbecue sauce

1 teaspoon Dijon mustard

1 teaspoon brown sugar

1) Combine all ingredients and set aside.


2 tablespoons milk

1 egg

1/3 cup seasoned croutons, crushed

1/2 cup sweet yellow onion minced finely

2 garlic cloves minced

2 tablespoons minced carrots

2 tablespoon minced celery

2 tablespoons fresh parsley minced

1 pound ground beef

2 tablespoons barbecue sauce

1 1/2 teaspoon Dijon mustard

1/2 teaspoon Worcestershire sauce

Salt and pepper

1) Preheat oven to 400 degrees. Line a baking sheet with tin foil then top with a wire rack. Whisk together milk and egg in a small bowl, add croutons and set aside.

2) Mince onion, garlic,carrot,celery and parsley together in a food processor or by hand. Combine crouton mixture,onion mixture and ground beef together with barbecue sauce, Dijon mustard, Worcestershire sauce and salt and pepper; mix gently with your hands. in a large bowl.

3) Form into 2 loaves and place on wire rack and bake 15 minutes. Brush glaze on loaves after cooking for 15 minutes and then cook another 20 minutes.
